Recipe for a Cold Night's Dinner

Italian Tortellini Soup
Recipe
1 large onion chopped (if you
refrigerate the onions first then they do not make you
tear as much)
2 large carrots, sliced
1 T Butter
1 (28 oz) can of peeled, chopped
tomatoes
1 cup hard tortellini (I love
tortellini so I put in about 2 cups but it will decrease
the liquid so you might want to add more)
4 cups of chicken broth
8 oz of Italian Turkey sausage, make
sure you take it out of it's casing if it is in one and
cut it as best you can into small pieces (you can use
Tofurky Italian Sausage and it is just as good in my
opinion!)
2 medium zucchini, sliced
2 stalks of celery,
˝ teaspoon oregano
˝ teaspoon basil
Sauté the onion, celery, carrots, and
sausage in the butter for 5 minutes. Add the zucchini,
tortellini, chicken broth, oregano, basil, and tomatoes.
Simmer for 20-30 minutes. Serve sprinkled with parmesan
cheese, if desired. Serves 6.
*If you want to use the Tofurkey
sausage then add it when you add zucchini and simmer it
with the rest of the soup. You can also make this
soup and individually freeze it in a dinner sized
serving for those really long days! Just to warn you
this soup does tend to absorb liquids the longer it sits
because of the tortellini. Happy Cooking, and

Dear Area 2
Affiliates, I am back
from Denver trained, excited, and ready to hopefully
meet and get to know you all! The Area 2 Conference is
rapidly approaching which is a great time to meet your
fellow area 2 affiliates! It is going to be a great
weekend. Some of the topics the breakout sessions
address are sexual health, preventing educator burnout,
alcohol and drug prevention, and how to make quick and
healthy meals.
The main focus of this newsletter is
the conference but keep your eyes peeled for another
newsletter introducing your Leadership Team, letting you
know what is going on at BACCHUS and of course another
recipe. I think something sweet and possibly unhealthy
needs to make an appearance next! Area 2

Student Trustee's |

This upcoming spring season is
one of renewal, and as an affiliate of The BACCHUS
Network, you have opportunities to engage your peer
education organization in this
rejuvenation. The BACCHUS Network
exists to provide resources for peer educators to start
and re-energize activities on
hundreds of campuses. Each spring,
The BACCHUS Network hosts twelve area conferences across
the country with hundreds in attendance.
Through networking with other peer educators and
health professionals, presenting information from your
campus experience, and hearing speakers, affiliates have
a chance to celebrate their successes as well as
strengthen their visions. Meeting
with other peer educators is only one opportunity
offered by BACCHUS this spring. Two campus campaigns are
now available, free of charge, to all affiliated campus
programs. The first-ever national Promoting Mental
Health Campaign jumpstarts an entirely new era of
wellness promotion, and The Sexual Responsibility Week
materials reflect our continuing tradition of sexual
health promotion. Each campaign contains not only
samples of promotional items for your campaign, but also
a booklet of information and ideas that can be tailored
to individual campus and peer group
situations. BACCHUS recognizes
that your campus is unique, which is why these resources
are only the beginning. Take these ideas, and in the
spirit of spring, make them grow. In turn, tell us about
your peer education program with your charter renewal.
This form is your opportunity to express what resources
your campus uses, would like to receive, and how you've
improved on our designs. The
Student Advisory Committee and Student Trustees extend
their best wishes for your success this spring. Indeed,
the Student Advisory Committee is simply another
resource for your peer education progress, so connect
with your SAC representative to find out more regarding
what BACCHUS can do for you.
